Heat a #frying pan{} and saute @onion{1}(finely diced) and @bell pepper{1}(finely sliced) in a little oil until softened.
Add @salt{1%tsp}, @smoked paprika{1/4%tsp}, @sugar{1%tsp} and @chopped tomatoes{1%can}.
Bring the sauce to a gentle simmer to reduce slightly.
Poach @eggs{4} in the sauce and serve.
