Halve the @red cabbage{1%head}, cut out the tough stem and remove the top leaves.
Slice or grate the remainder.

In a #large pot{}, fry the @onion{3}(finely chopped) in @lard{2%tbs} until they are light brown.

Move the onions to the side of the saucepan, sliding the pot if possible so that the onion part is away from the heat source.

Put @sugar{1/2%cup} on the free surface of the saucepan and let it melt.
Once the sugar starts to turn golden, add the chopped cabbage and mix everything together.
Don't be alarmed if the sugar forms hard lumps; it will dissolve as the cabbage stews!

Season the cabbage with @salt{1%tsp}, @caraway seeds{1%tbs} and pour in @vinegar{1/2%cup}.
Stir well, then turn down the heat.
Cover the pot with a lid and simmer on low heat for about ~{45%min}.

Remove the lid, raise the heat to medium and allow any liquid that the cabbage has released to evaporate.
Stir occasionally.
Once the liquid has evaporated and the cabbage starts to fry and stick to the bottom of the pot, you're done!

Transfer the shredded potatoes to a #colander{} and squeeze out excess water.

Put the potatoes in a bowl and pour @milk{2/3%cup}(hot) over them.
Add @egg{1}, @flour{1/2%cup}(all-purpose), @garlic{5%cloves}(pressed), @dried marjoram{1%tbs} and @salt{1%tsp}.
Stir until combined.
The batter should have a semi-fluid consistency.

Heat @oil{2%tbs} in a #non-stick frying pan{} over medium-high heat.
Quickly stir the batter, then scoop up a ladleful and pour it carefully into the center of the pan.
Using the flat side of the spoon, spread the batter into a 1/4 inch thick pancake about 6-8 inches in diameter.

Fry each potato pancake for about 2-3 minutes on both sides.
Once the edges start to turn golden, flip the pancake with a spatula.
